Ingredients - 16 ounces garbanzo beans, drained - 1/4 cup olive oil - 1 tablespoon lemon juice, fresh - 2 cloves garlic, minced - 1/4 teaspoon black pepper, freshly ground - 1/2 teaspoon cumin seeds - 2 tablespoons tahini or creamy peanut butter - 1 tablespoon parsley, chopped (optional) This popular, easily prepared Middle Eastern dish can be served as a delicious dip for vegetables or a savory spread for pita bread. Directions
- Purée drained beans, garlic and parsley in a food processor. Add remaining ingredients
and process until combined.
Serve at room temperature, with raw vegetables or crackers. Store in refrigerator.
