Spinach and Potato Latkes Prep Time: 30 minutes Cook Time: 15 minutes

Ingredients - 10 ounces frozen spinach, thawed - 4 potatoes, large - 1 onion, medium - 3 eggs, slightly beaten - 1/3 cup flour - 1 1/4 teaspoons salt - 1 teaspoon baking powder - oil for frying - garnish: sour cream, optional Directions
- Thaw and drain spinach. Remove any excess moisture.
- Peel and grate potatoes and
onions. Remove any excess moisture.
Combine all ingredients. In a large, heavy skillet heat a small amount of oil. Form ingredients into small 3-inch to 4-inch cakes. Place cakes into prepared skillet. Brown on both sides.
Remove from skillet and place on paper towel to remove excess oil.
Place in warm oven until time to serve. Garnish with sour cream if desired.
