Ingredients
- 2 pounds new red potatoes
- 1/2 cup mayonnaise
- 2 teaspoons dried basil leaves
- salt and pepper to taste
- 3 eggs, hard boiled, peeled and chopped
- 2 carrots, peeled and shredded
- 1 red bell pepper, chopped
- 1 cup celery, chopped
- 1/2 cup sweet onion, peeled and finely chopped

  • In a heavy sauce pan, cook potatoes in boiling salt water approximately 15 minutes or
    until tender. Drain and cool.
  • In a large bowl, blend mayonnaise, basil, salt and pepper.
    Add remaining ingredients. Stir until well blended.
  • Cover and chill 1 to 2 hours. Serve.
