Cilantro Salad Dressing Prep Time: 15 minutes

Ingredients - 1 bunch cilantro (leaves only) - 3/4 cup extra virgin olive oil - 3/4 cup light mayonnaise - 2 jalapeño peppers, seeded and diced* - 1/2 cup feta cheese (any flavor) - 1 clove garlic, minced - 1/2 teaspoon salt - 1/4 teaspoon freshly ground black pepper Great on romaine salad. Directions
- In a food processor or blender, combine all ingredients. Cover and pulse until smooth, or
if preferred, coarsely chopped.
Refrigerate a minimum of one hour.
Keeps approximately 5 days in the refrigerator.
*Or 4 ounces of green chilies, diced.
