Easy Cabbage Salad Prep Time: 15 minutes

Ingredients - 1 pound cabbage - 2 carrots - 2 tablespoons honey - 2 tablespoons balsamic vinegar - 1/2 cup sunflower seeds or almonds (optional) - 1 pinch salt This crunchy sweet-and-sour salad, a favorite with kids, lends itself to endless variations. For instance, try adding celery, chopped apples or raisins. Directions
- Coarsely chop or grate about half a medium sized head of green cabbage. Coarsely chop or
grate 2 carrots. Mix cabbage and carrots together.
In a small bowl, mix together 2 tablespoons honey, 2 tablespoons balsamic vinegar and a pinch of salt. Pour the dressing over the vegetables, mix well and, if you wish, sprinkle with 1/2 cup roasted salted sunflower seeds or toasted almonds, chopped or slivered.
