Ingredients - 8 cups old fashioned oatmeal, uncooked - 1/3 cup vegetable oil - 1/2 cup honey - 1/2 teaspoon salt (opt) - 1 teaspoon vanilla extract - 1/2 cup coconut, flaked - 1/2 cup wheat germ - 1/2 cup flax seed meal (optional) - 1 cup raisins - 1 cup dried fruit (craisins, apples, apricots, dates,etc.) - 1 cup almonds, and/or walnuts, and/or sunflower seeds - 1/2 cup sesame seeds - 3/4 cup raw pumpkin seeds (opt) The options are unlimited in this recipe. Add as much or as little fruits and nuts as you prefer. Create a healthy dessert parfait with this layered with some low-fat yogurt.
