Ingredients - 4 large eggs - 1 1/2 tablespoons butter - salt to taste - freshly ground black pepper - 1/4 cup onion, minced - 1/4 cup sweet red or green bell pepper, diced - 1/4 cup salsa for garnish Spice up this breakfast meal with a little color and flavor by adding any type of salsa from mild to hot. Directions
- In a medium bowl, beat eggs until completely combined. Add seasoning.
- Over medium
heat, melt butter in pan and pour eggs into skillet. Add onion and peppers.
Stir occasionally with wooden spoon, turning eggs. Cook until they are soft set and somewhat moist, approximately 3-4 minutes.
Remove from heat. Top eggs with salsa and serve.
