Pork Chow Mein

Ingredients
- 1 pound pork sausage
- 2 cloves garlic, divided
- 4 tablespoons soy sauce, divided
- 1 cup chicken broth
- 2 tablespoons corn starch
- 1 cup carrots, diced
- 1 cup celery, sliced
- 1 cup green onions, sliced
- 1 cup spinach, diced
- 4 cups cooked rice
- chinese noodles 
 
Quick and easy meal to pull together in a pinch. I usually cook my rice in chicken broth for some
added flavor.

Directions
Cook rice according to package. In a large skillet, brown pork with garlic and 2 tablespoons soy
sauce. Remove from skillet; keep warm. Meanwhile, in a small bowl, combine remaining soy sauce,
broth and corn starch. Stir until smooth. In skillet, stir fry carrots and celery for 4-5 minutes,
until softened. Add onions, spinach and pork and cook 1-2 minutes more. Stir in sauce mixture and
boil 3-4 minutes, until thickened. Serve over rice and chinese noodles, if desired.
