Chocolate Chip Cupcakes

Ingredients
- 3 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 1/2 cup cocoa
- 2 cups water
- 1 cup vegetable oil
- 2 tablespoons vinegar
- 1 teaspoon vanilla
- FILLING:
- 8 ounces cream cheese
- 1 egg
- 1/2 cup sugar
- 1 cup chocolate chips
- FROSTING:
- 1 cup sugar
- 1/3 cup milk

- 5 tablespoons butter
- 1 cup chocolate chips
- 40 mini marshmallows 
 
Similar to a ho-ho. These freeze perfectly, too.
 
Directions
Preheat oven to 350 degrees. Place paper liners in muffin tins. In a large bowl, combine dry
ingredients. Beat in liquid ingredients until smooth. For filling, in a smaller bowl, beat cream
cheese, egg and sugar until smooth. Stir in chocolate chips.. Fill cupcake tins 1/2 full with
chocolate batter. Put 1 tablespoon of filling into center of each. Place a spoonful of batter
over the filling. Bake for 30 minutes. For frosting, combine sugar, milk and butter in a small
saucepan. Boil for 1 minute over medium heat. Remove from heat. Add chocolate chips and marshmallows
and stir until melted. Spread over cupcakes.
