Veggie Spring Rolls

Ingredients - 3 cups carrots - 2 cups cucumber - 30 pieces seaweed paper - 1 package tofu - 4 cups rice - 1 package rice paper Asian inspired American rolls. Directions Julianne the carrots and cucumber. Cook the rice. Soak one piece of rice paper at a time; remove and place a small amount of carrots and cucumbers on rice paper. Add a small strip of seaweed paper onto rice paper. Lay two teaspoons of rice on top. Roll up and stack on a plate; refrigerate for one hour. Serve with soy sauce.
