Springtime Pizza Recipe

Healthier than the usual pizza recipes that are loaded with meat and cheese, this colorful vegetable pizza can be eaten guilt free, and it’s delicious to boot!
Directions
  • On prepared pizza crust, sprinkle olive oil, then sprinkle on chopped garlic.
  • Layer vegetables, starting first with tomatoes in single layer, then peppers in single layer, then onion rings.
  • Sprinkle with basil leaves and cheese.
  • Slide onto pizza pan or stone.
  • Bake 8-10 minutes in 450° oven, until crust is golden brown.
  • When done, place on cutting board, pile spinach leaves in center of pizza, and drizzle with about 2 teaspoons of olive oil.

Ingredients
- 1 prepacked pizza crust or make your own
- 5 teaspoons olive oil - for sprinkling
- 1 clove garlic - minced
- 4 plum tomatoes - sliced thin
- 5 miniature peppers - combination of red, yellow and orange - sliced thin
- 1/2 sweet onion - sliced thin
- 1/2 cup fresh basil - torn
- 1/2 cup fontina cheese - shredded, or any favorite such as provolone or fresh mozzarella
- 2 cups baby spinach leaves
