Grilled Chicken Ciabatta Sandwiches

Ingredients
- MAYONNAISE SAUCE
- 3/4 cup mayonnaise
- 1 tablespoon lemon zest
- 3 tablespoons fresh basil - chopped
- CHICKEN
- 6 ounces marinated mozzarella cheese, sliced thin (or plain fresh mozzarella)
- 2 chicken breasts - seasoned with lemon pepper
- 4 ounces mozzarella cheese - sliced thin
- 1 ciabatta bread loaf, sliced in half the long way
- 1/2 package spinach (5 oz)
- 1 tomato - sliced thin 
 
When a sandwich recipe features tender grilled chicken, marinated mozzarella cheese, fresh spinach

leaves, and thinly sliced tomato, as this one does, it promises to be delicious. When the ingredients
are placed on a ciabatta loaf spread with a fresh basil and lemon mayonnaise, then served hot off
the grill, it becomes hard to beat.
 
Directions

  • Mayo sauce: Mix together mayonnaise, lemon zest and basil. Refrigerate until ready to
    use.
  • Preheat grill to medium.
  • Season chicken with lemon pepper.
  • Place on grill and grill 5 minutes each side, just until no longer pink in the middle.
  • Remove from grill, allow to rest for 5 minutes.
  • Meanwhile, cut bread in half horizontally and through middle, so you have 4 halves.
  • Spread each half with mayo mixture.
  • On the 2 bottom halves layer marinated mozzarella slices, then chicken, which has been sliced
    thin, spinach, tomato and top with slices of mozzarella.
  • Place top half of bread on each sandwich.
  • Wrap each sandwich in foil, place on grill.
  • Press down slightly. Grill for 3-5 minutes, just until cheese starts to melt and grill marks
    are on bread.
  • Turn over and grill in foil another 3-5 minutes. Serve warm.
