Blueberry Banana Bread

- 1 cup frozen blueberries, heaping
- 1 3/4 cups all-purpose flour, divided
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt, scant
- 1/4 teaspoon ground nutmeg
- 5 tablespoons unsalted butter, softened
- 1/2 cup sugar
- 2 eggs
- 3 tablespoons buttermilk (or 3 Tbsp. milk + 1 tsp. vinegar)
- 2 ripe bananas, mashed (around 1 cup)

My kids enjoy this tasty treat for breakfast, brunch or a snack! It is a combination of my
grandmother's recipe and a recipe from a light cookbook. It's so moist it doesn't even need butter
on the slices.
 
Directions
Toss Blueberries with 2 Tbsp. flour and set aside. Combine remaining flour, baking powder, soda,
salt and nutmeg in a small bowl. Cream butter and sugar in a large bowl at medium speed. Add eggs,
one at a time, beating well after each egg. Stir in buttermilk. Add flour mixture alternately
with mashed banana, beginning and ending with flour mixture. Mix just until dry ingredients are
moistened. Fold in reserved blueberries. Spoon batter into a 9x5 loafpan coated with cooking spray
or butter. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out
clean. Let cool in pan 10 minutes; remove to wire rack and cool completely. Enjoy!
