Ingredients
- 1 pound small carrots, cut into matchstick pieces or grated
- 2 tablespoons balsamic vinegar
- 1/2 cup orange juice
- 1/2 orange - zested
- 2 oranges - peeled, segmented, segments cut into 1/2" pieces
- 2 tablespoons dill - fresh, plus more for garnish or use 1 tablespoon dried dill

Directions

  • Combine carrots, vinegar, orange juice, and zest in a mixing bowl. Stir to combine.

  • Add orange segments and 1 tablespoon dill. Lightly toss.
  • Cover and chill 6 hours or overnight.
  • Just before serving, place in serving bowl and sprinkle with more dill.
