Eggplant and Cheese

Ingredients - 1 large eggplant - 3/4 cup olive oil - 1/4 cup grated Parmesan cheese - 8 ounces shredded Mozzarella cheese snack Directions Cut eggplant into 1/4-inch slices. Fry on both sides in skillet in oil until browned. Place eggplant slices in baking dish; cover with Parmesan and Mozzarella cheese. Bake at 400° for 10 minutes.
