Chicken Kabobs

Ingredients
- 6 chicken breast, boneless, skinless, 1-inch cubes
- 8 ounces mushrooms, halved
- 1 red onion, cut into 1-inch slices
- 2 red peppers, cut into 1-inch slices
- 2 packages Good Seasonings Italian Dressing
- vegetable oil
- vinegar
- 2 lemons
- skewers 
 
These are a weekly meal during the summer at our house. Outside of putting the skewers together,
its easy to throw together. Use any of your favorite vegetables.

Directions
Mix Italian dressing with oil and vinegar according to package directions. Place chicken cubes in
ziploc bag and pour half of the dressing over the top. Place vegetables in a separate ziploc bag
and pour the remaining dressing over the top. Close each bag tightly. Place both bags in the
refrigerator to marinate 4-6 hours. Soak skewers in a pan covered in water to prevent burning.

When

ready to assemble kabobs, alternate meat and vegetables. Preheat grill to medium heat. Place the
skewers on the grill and grill for 4-6 minutes per side, squeezing lemon juice over the top.
