Broccoli Cabbage Slaw with Chipotle Mayo

Ingredients
- CHIPOTLE MAYONNAISE
- 1 cup mayonnaise
- 1/2 cup sour cream - regular or low fat
- 2 tablespoons lemon juice
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 chipotle pepper - canned in adobe sauce (use less if you don't want much heat)
- SLAW
- 1 bunch broccoli - cut into bite size pieces
- 1/2 package cabbage mix (16 oz.)
- 1/2 package red cabbage (10 oz.)
- 1/2 package carrots - shredded
- 2 apples - peeled, diced

If you’re tired of the ordinary and slightly bland versions of creamy coleslaw that we are all
accustomed to, here’s a distinctive Southwestern inspired version that is packed with flavor and
is sure to become one of your favorite coleslaw recipes.
 
Directions
MAYO:

  • Combine mayonnaise, sour cream, lemon juice, garlic, salt, pepper, and chipotle in food
    processor. Process until smooth, adjust seasoning to taste.
  • Cover and chill.
SALAD:

  • Combine broccoli, cabbages, carrots and apple in large bowl.
  • Right before serving, pour chipotle mayo over slaw. Toss to blend.
  • Serve immediately.
