Ingredients
- 1 cauliflower head, trimmed, cut into pieces
- 1/4 cup olive oil
- 1 tablespoon rosemary - fresh, chopped
- 2 tablespoons ranch dressing
- 1/4 cup parmesan cheese - shredded
- 1/4 cup Asiago cheese - shredded
- 1 clove garlic - minced
- 1 green onion - chopped
- salt and pepper to taste
- 1 tablespoon butter

Directions

  • Preheat oven to 400°.
  • Spread cauliflower pieces on baking sheet. Sprinkle with about 1/4 cup olive oil. Sprinkle
    with rosemary, salt and pepper.
  • Bake in oven 20 minutes, stirring occasionally, until lightly browned and tender.
  • When done, immediately place in large bowl with sour cream, ranch dressing, cheeses, garlic,
    salt & pepper, and butter.
  • Using immersion blender, process all until smooth. You may need to add more ranch dressing if
    it seems dry.
  • Season with salt and pepper if needed. Garnish with green onion. Serve hot.
