Chutney Curry Chicken Sandwich

Ingredients
- 3/4 cup yogurt or sour cream
- 3/4 cup chutney mango
- 2 tablespoons lime juice
- 2 tablespoons curry powder mild
- 1/2 cup golden raisins
- 3 chicken breasts boneless, grilled, sliced into bite size pieces
- 2 green onions chopped
- 1/2 cup cilantro leaves, chopped
- 1 cup baby spinach leaves or favorite lettuce leaves
- 6 sandwich rolls split
- salt and pepper to taste 
 
Mango chutney adds great flavor to the yogurt curry sauce in these sandwiches.

Directions

  • In food processor, pulse yogurt, chutney, lime juice and curry until blended but not completely
    smooth.
  • Scrape the mixture into medium bowl, add grilled chicken pieces, green onion and cilantro;
    toss well.
  • Season with salt and pepper.
  • Lay spinach leaves on rolls, spoon chicken salad to top and serve.
