Beets with Raisins

Ingredients
- 16 ounces (1 can) sliced or diced beets
- 3/4 cup beet juice
- 1 tablespoon cornstarch
- 1/4 cup orange juice
- 1 tablespoon lemon rind
- 1/2 cup cane or regular white sugar
- 1/4 cup cider vinegar
- 1/2 cup golden raisins
- 1/2 cup regular raisins
- 1 pinch salt 
 
Sweet and tangy, this chutney-like dish is an excellent accompaniment for poultry or pork.

Directions

  • Drain liquid from the beets to equal 3/4 cup, add water if necessary.
  • Set beets
    aside.
  • Place beet juice in a medium saucepan.
  • Whisk in the cornstarch until all lumps are
    removed.
  • Add the remaining ingredients to the saucepan.
  • Heat over medium heat and stir until thickened, approximately 10 minutes.
  • Reduce heat to low and simmer gently for 10 more minutes.
  • Add the beets and heat
    through.
  • Serve warm.
  • Goes great with pork or chicken.
