Directions
Drain liquid from the beets to equal 3/4 cup, add water if necessary.
Set beets aside.
Place beet juice in a medium saucepan.
Whisk in the cornstarch until all lumps are removed.
Add the remaining ingredients to the saucepan.
Heat over medium heat and stir until thickened, approximately 10 minutes.
Reduce heat to low and simmer gently for 10 more minutes.
Add the beets and heat through.
Serve warm.
Goes great with pork or chicken.
