Cilantro Peanut Chicken

Ingredients
- 1 cup honey roasted peanut and cashew mix
- 1 bunch fresh cilantro - remove bottom half of stems
- 1/4 cup olive oil
- 4 cloves garlic
- 2 tablespoons soy sauce
- 1/2 tablespoon brown sugar
- 3 pepperoncini - seeded or fresh jalapeños
- 1 lime - plus lime wedges for garnish
- salt and pepper to taste
- 3 pounds chicken pieces

  • In a blender or food processor, blend the peanuts, cilantro, oil, garlic, soy sauce, brown
    sugar, pepperoncini and lime juice.
  • Blend into a smooth paste.
  • Add salt and pepper to
    taste.
  • Reserve 1/2 cup for serving with chicken.
  • Use the rest to brush on the
    chicken.
  • Place chicken pieces in a 9x13 dish.
  • Coat pieces with sauce.
  • Marinate in the refrigerator for an hour or two.
  • Bring to room temperature before
    cooking.
  • Preheat grill to medium.
  • Place chicken pieces directly on the grill.
  • Turn frequently until golden and crisp.
  • Watch carefully so that the sauce does not burn
    on the chicken.
  • Grill for approximately 20-30 minutes.
  • Serve with lime wedges and reserved
    marinade.
