- Mix butter, 1/3 cup sugar, flour, almond extract and graham cracker crumbs in a bowl.
- Press mixture over the bottom and 1 inch up the sides of a 9 inch springform pan.
- Mix cream cheese, 1/4 cup sugar, egg and 1/2 teaspoon vanilla.
- Pour mixture over prepared crust.
- Toss apples with 1/3 cup sugar, egg and vanilla in a bowl.
- Spoon apple mixture over the cream cheese mixture.
- Sprinkle with almonds if desired.
- Bake at 450° for 10 minutes.
- Reduce oven to 400° and bake for 30-40 minutes longer or until the center is set.
- Cool in the pan.
