Lobster Salad

Ingredients
- 3 pounds cooked lobster meat - chopped
- 1/2 cup celery - diced fine
- 1/2 cup red onion - diced fine
- 3/4 cup mayo, light or regular - or to taste
- 1/2 cup fresh lemon zest
- 1/2 teaspoon Old Bay Seasoning
- salt and pepper to taste
- 1 tablespoon capers
- 4 tablespoons olive oil
- 1 baguette - sliced into 1/4 inch slices
- parsley for garnish 
 
This light salad is great as an appetizer or a light lunch.

Directions

  • Mix lobster meat, celery, onion, mayo, zest, seasonings and capers.
  • Chill in refrigerator.
  • Lay
    baguette slices on a baking sheet and sprinkle with olive oil.
  • Bake at 350° F until lightly toasted, approximately 5 minutes.
  • When cool, spoon
    generous amount of lobster salad onto each baguette.
  • Garnish with parsley.
