Ingredients - 4 large stalks celery; use more if stalks are small - 1/2 cup dried cranberries (substitute golden raisins) - 2 tablespoons chopped fresh parsley (optional) - 1/4 cup vinaigrette, purchased or homemade - 1/4 cup feta cheese Quick, crunchy and colorful! Add chopped walnuts for additional texture and flavor if you wish. Directions
- Wash and slice the celery thinly. Mix in the cranberries and parsley, if using. Toss
with vinaigrette and top with crumbled feta cheese.
