Potato Pancakes with Ham Topping

Ingredients
- 5 medium potatoes - boiled and mashed
- 1 1/4 cups lukewarm water
- 1 tablespoon rapid rise yeast
- 1 1/2 cups plain all-purpose flour
- vegetable oil for frying
- 6 slices of ham
- 12 dollops sour cream
- salt and pepper
- 3 green onions - chopped for garnish 
 
Light potato pancake that is easy to make and can be used with variations of toppings.

Directions

  • Place mashed potatoes, yeast and flour in a large bowl.
  • Pour in water and mix well.
  • Leave to rise in a warm place for approximately 30 mintues. The dough will double in
    size.
  • Heat a non-stick fry pan and add 1 tablespoon of oil to it.
  • Drop spoonfuls of the dough
    onto the preheated pan. They should be approximately 2-3 inches in diameter.
  • Cook potato pancakes over medium heat for 3-5 minutes or until light golden brown on the
    underside.
  • Turn with a spatural and cook on the second side for approximately 1 minutes.
  • Season with salt and pepper and transfer to a platter.
  • Top with a small dollop of sour cream and 1/2 slace of ham that is rolled up.
  • Garnish with a grind of pepper and sprinkle of green onion.
