Ingredients
- 2 cups carrots, peeled & chopped
- 1 sweet potato, peeled and cubed
- 1 zucchini, sliced
- 1 cup brocolli, frozen or fresh
- 1 sweet onion, chopped
- 1 stalk celery, chopped
- 1 baking potato, cubed
- 14 ounces chicken broth or stock
- 1 teaspoon chicken bouillon granules (optional)
- 2 teaspoons salt, adjust to taste
- 1 cup water
- 1/2 teaspoon black pepper

Slow cooking provides subtle flavors to this easy to prepare vegetable soup.
 
Directions

  • Prepare vegetables and place all ingredients in slow cooker.
  • Cover slow cooker and turn on low for 8 hours or high for 4 hours.
  • During the last hour of cooking time, add 1 additional cup of chicken broth or milk. Continue
    cooking time.
  • Season to taste.
