Turkey, Sweet Potato and Cranberry Quiche

Ingredients
- 1 9 inch refrigerated pie crust
- 1 sweet potato, peeled and cut into 1/2 inch cubes
- 1 tablespoon vegetable oil
- 1/3 cup sweet onion, chopped
- 1 clove garlic, chopped
- 3/4 cup red, sweet bell pepper, chopped (about 1/2 of a pepper)
- 3/4 cup green, sweet bell pepper, chopped ( about 1/2 of a pepper)
- Salt and pepper
- 1 cup white turkey meat, chopped
- 16 ounces whole cranberry relish, divided
- 1/4 cup dried cranberries, optional
- 6 large eggs, slightly beaten

- 1 cup skim milk
- 1 tablespoon prepared mustard
- 1 1/2 cups shredded cheese, swiss or cheddar

Directions

  • Preheat oven to 400° F.

  • Roll out prepared pie crust to fit a 10" quiche or pie dish. Using a fork, prick holes in
    bottom and sides of unbaked crust.

  • Pre-bake crust for 7 to 8 minutes before adding ingredients. After crust finishes baking,
    remove crust from oven and reduce oven heat to 375° F.

  • While crust is baking, chop sweet potato into cubes and sauté on medium high heat in a
    tablespoon of vegetable oil for 3 to 4 minutes.

  • Add onion, garlic and peppers. Sauté an additional 3 to 4 minutes and lightly season with

salt and pepper. Pour sautéed ingredients into crust after it has finished baking.
  • Chop turkey into small cubes or pieces and add into sautéed ingredients placed in
    crust.

  • Layer 1 cup of whole cranberry relish over other ingredients placed in crust. Optional: Dried
    cranberries can be added into the whole cranberry relish to enhance the flavor if desired.

  • In
    medium mixing bowl, lightly beat eggs. Combine skim milk and prepared mustard. Mix
    together.

  • Pour egg and milk mixture over ingredients placed in baked crust.

  • Top quiche ingredients with shredded cheese. Any variety of cheese can be used or a combination
    of several varieties that equal 1 1/2 cup.

  • Bake for 45 to 50 minutes and check during the last 10 minutes to make sure topping is not
    browning too much. If excessive browning begins to occur, cover loosely with foil and finish
    baking. Serve when ready.

  • Garnish with remaining cranberry relish or serve it to be added for those desiring to do so.
