- 1 teaspoon vanilla - 1/2 cup walnuts, coarsely chopped Cinnamon, nutmeg, and cloves are combined with pumpkin and walnuts to create a delicious muffin that can be enjoyed anytime. Directions
Preheat oven to 350°F.
Prepare muffin tin with liners or lightly grease each muffin cup.
In a large mixing bowl combine the first eight dry ingredients.
In a separate bowl slightly beat eggs. Add oil, pumpkin and vanilla. Stir to combine.
Add egg mixture to dry ingredients, stir until just combined.
Fold in nuts.
Spoon into muffin tin.
Bake 20 minutes or until a toothpick comes out clean.
Remove from oven. Leave muffins in pan 5 minutes before transferring to a cooling rack.
