Pumpkin Nut Muffins

Ingredients
- 1 cup granulated sugar
- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cloves
- 3/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup pumpkin, solid

- 1 teaspoon vanilla
- 1/2 cup walnuts, coarsely chopped 
 
Cinnamon, nutmeg, and cloves are combined with pumpkin and walnuts to create a delicious muffin
that can be enjoyed anytime.
 
Directions

  • Preheat oven to 350°F.

  • Prepare muffin tin with liners or lightly grease each muffin cup.

  • In a large mixing bowl combine the first eight dry ingredients.

  • In a separate bowl slightly beat eggs. Add oil, pumpkin and vanilla. Stir to combine.

  • Add
    egg mixture to dry ingredients, stir until just combined.

  • Fold in nuts.

  • Spoon into muffin tin.

  • Bake 20 minutes or until a toothpick comes out clean.

  • Remove from oven. Leave muffins in pan 5 minutes before transferring to a cooling rack.
