In a medium bowl, blend bread crumbs, parmesan cheese, and salt.
In a seperate bowl, beat the eggs until combined.
Dip the cheese sticks into the eggs to coat completely, allowing the excess to drip off back into the bowl.
Then, coat the cheese in the bread crumb mixture.
Pat it down to make sure it coats completely.
Place the sticks on a baking sheet.
Repeat the coating process with egg and bread crumbs a second time with each stick.
Cover with plastic wrap and freeze until frozen, approximately 2 hours but no longer than 2 days.
Heat oil in a large fry pan over medium heat.
Fry the cheese until golden brown, approximately one minute per side.
Transfer the sticks to a plate lined with paper towels to drain.
Sprinkle with remaining cheese and serve with your favorite marinara sauce.
