Pork and Mango Kebabs

Ingredients

- Rub
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon ground corriander
- 1/2 teaspoon sugar
- 1/4 teaspoon five spice powder
- 1/4 teaspoon ground cayenne pepper
- Skewers
- 1 1/2 pounds boneless pork sirloin cut into 1 inch cubes
- 1 tablespoon olive oil
- 4 ripe mangoes, cut into 1 inch chunks
- 6 green onions, white and light green parts only, cut into 1-2 inch lengths

Pork and mango combine in this tropical flavored kebab.
 
Directions
Rub
  • In a medium bowl, mix the rub ingredients with your fingers. Add the pork and mix
    well to coat thoroughly.
  • Add the oil to lightly coat. Allow to stand for 10-15 minutes before
    grilling
  • While meat is marinating, place 4 skewers into water and allow to soak for up to 20
    minutes.
Skewers:
  • Thread alternately the pork, mangoes, and green onions onto
    skewers. Leave a little room between each.
  • Grill over high heat until pork is barely pink,
    approximately 8-10 minutes, turning once.
  • Place skewers on platter and serve.
