Onion Flatbread Pizza

Ingredients
- hard flatbread, 12 to 14 inch diameter
- 3 tablespoons olive oil, divided
- 1/2 cup kalamata olives, pitted
- 1 1/2 cups mushrooms, sliced
- sweet onion, chopped coarsely
- 8 ounces mozzarella or swiss cheese, shredded
- fresh basil leaves
- salt and pepper to taste 
 
Crispy, light and delicious, this crackerbread pizza can be served as an appetizer, a snack or a
tasty light meal.

Directions
  • Preheat oven broiler.
  • Add 1 tablespoon of oil to a large skillet. Over medium high
    heat, saute onions and mushrooms until light and golden brown, appproximately 10 minutes.
  • Slice
    olives, remaining mushrooms, onion, and cheese into small pieces.
  • Place flatbread on baking
    sheet and brush surface with 2 tablespoons of olive oil. Randomly place topping ingredients on
    the surface of the flatbread, placing the pieces of cheese on last. Salt and pepper, as desired.
  • Place flatbread on the middle oven rack. Lightly melt cheese over other ingredients and remove
    when fully melted, approximately 5 minutes. Garnish with basil leaves.
  • Serve whole and allow
    pieces to be broken off for servings.
