Cuban Burger with Jicama Slaw

Ingredients

- SLAW
- 1 can chipotle pepper in adobo sauce
- 1/4 cup lime juice
- 1/2 teaspoon salt
- 1/3 cup fresh cilantro, chopped
- 1/4 cup sour cream
- 2 tablespoons mayonnaise
- 2 cups peeled, shredded jicama
- BURGER
- 1 clove garlic, minced
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1/2 pound lean ground beef
- 1/2 cup canned black beans, rinsed and drained
- 1/4 cup fire roasted chunky salsa 
 
With a hint of spice and wonderful texture from the black beans, this Cuban sandwich is topped
with a jicama slaw for a sweet, crunchy, delicious burger known in the Carribean as a chimichurri
or slaw burger.
 
Directions
To Prepare Slaw:
  • In a small food processor or blender, combine chipotle peppers, lime
    juice, and 1/2 teaspoon salt. Process until smooth. Place in a medium sized bowl and mix in
    cilantro, sour cream, and mayo.
  • Shred jicama with a hand held grater. Add jicama to bowl, and
    toss to combine. Cover and refrigerate until ready to use.

To Prepare Burgers:
  • In a medium sized bowl, combine salsa, garlic, chili powder, 1/2
    teaspoon salt and black pepper. Add beef and beans; mix together. Shape into six equally sized
    patties.
  • Grill burgers for 10-13 minutes, or until cooked through, turning once while cooking.
  • Serve immediately with slaw on top of burgers.
