Directions
- Trim and snap fresh green beans. Cook in salted, boiling water until "al dente" (or just
slightly crisp).
Whisk together oil, vinegar, orange juice, and fennel. Season with salt and pepper. Set aside.
When beans are finished, drain and allow to cool slightly. Toss beans with the feta cheese. Mix the beans and cheese with the baby greans.
Pour dressing mixture over the greens. Top with dried cranberries and/or almonds, if desired.
Refrigerate until ready to serve.
