Pasta Salad - Gluten Free - Recipe

Try several kinds to find the most satisfactory ones. This easy, colorful salad will make experimenting fun. It will keep, refrigerated, for days.

Pasta Salad - Gluten Free Recipe
Directions
  • Cook pasta according to package directions in boiling salted water. Leaving pasta water on medium-high heat, scoop cooked pasta out with a slotted spoon or skimmer, and drain well.
  • Add beans to boiling pasta water and cook until crunchy-tender. Lift out and drain.
  • Add onions to boiling pasta water and cook for a minute or two, to mellow the harsh raw-onion taste. Drain well.
  • Combine pasta, peppers, beans, and onions. Pour vinaigrette over and mix well. Serve at room temperature, or chilled.

-1/2 pound green beans, fresh or frozen, cut into 1-2" pieces
-1 red bell pepper, chopped
-1 small onion, sliced thinly
-1/2 cup vinaigrette dressing, bottled or homemade
-1/2 cup grated cheese (optional)
