Honey Mustard Barbecue Sauce - Recipe

This quick and easy barbecue sauce can be made while the grill heats. Kids like its sweet tang, but the "firepower" can be raised to suit any taste. Will keep for a week or more, refrigerated. Especially good on chicken or pork.

Directions
  • In a small skillet or saucepan, melt butter. Add onion and cook until soft, about 5 minutes. While the onion cooks, remove the zest from the lemon, chop finely, and juice the lemon.
  • Mix in all remaining ingredients and simmer 5 minutes.
  • Brush onto grilled food a few minutes before food is fully cooked. Don't put it on earlier-- the honey will burn.
  • TIP: If grilling for diners whose preference for hot or mild sauce varies, make the sauce according to the recipe, reserve some as made, and add more cayenne to the rest. Be sure to keep the categories separate when serving!

-1 tablespoon butter
-1 onion, chopped fine
-1/4 cup vinegar
-1/4 cup honey
-1 tablespoon molasses
-1/2 cup prepared mustard, any kind
-1/2 teaspoon liquid smoke (optional, but good)
-1/4 teaspoon cayenne pepper, to taste
-1 small lemon, juice and zest (substitute 2 tablespoons lemon juice)
