Basic Rack of Lamb Recipe

A rack of lamb (a roast consisting of a row of unseparated rib chops) is the ultimate cut of lamb and needs no embellishment. This simple preparation allows the delicious flavor of lamb to be the star.
Directions
Preheat oven to 400° F. Have the meat at room temperature before roasting.
Trim any silverskin or areas of excess fat from meat. Cut rack in half if necessary to fit in roasting pan, or leave whole. It will roast well either way. Salt and pepper the rack, put it in preheated oven, and roast to desired doneness, about 13 minutes per pound for medium-rare, or 135° F on an instant-read thermometer.
Remove from oven and let stand about 5 minutes before serving.
