Remove chops to a warm plate and cover loosely, leaving browned bits and about 1 tablespoon fat in pan. If there's less than 1 tablespoon fat, add a little butter or oil.
Add gooseberries to pan and cook about 2 minutes to soften. Add sugar, soy sauce and about 1/2 cup water. Mash most of the gooseberries into the sauce and cook to desired thickness--about 5 minutes total cooking time.
Add salt and pepper to taste, and additional sugar if needed--but sauce should be tart, not sweet. Spoon over chops and serve.
