Raisin and Oatmeal Cookies

Ingredients
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 pound unsalted butter, softened
- 1 cup brown sugar, packed
- 2 eggs, large
- 2 teaspoons vanilla
- 1 cup raisins
- 3 1/4 cups oatmeal, old fashioned* 
 
Like all raisin and oatmeal snacks, this cookie provides a healthy and delicious treat for all ages.

Directions
  • Preheat oven to 350°F.
  • Cream butter and sugar in a large bowl. Add eggs
    and vanilla and beat to combine.
  • In a medium bowl, mix the first 6 dry ingredients
    together and gradually add this to the creamed mixture until well blended. Stir raisins and oatmeal
    into mixture.
  • On the prepared cookie sheet, drop 1 heaping tablespoon of dough per
    cookie.
  • Bake 8 to 12 minutes. Remove pan from oven. Leave cookies on baking sheet for 1
    to 2 minutes, then transfer to a wire cooking rack.

    *Do not use instant or quick cooking oatmeal.
