Spinach and Potato Latkes

Ingredients
- 10 ounces frozen spinach, thawed
- 4 potatoes, large
- 1 onion, medium
- 3 eggs, slightly beaten
- 1/3 cup flour
- 1 1/4 teaspoons salt
- 1 teaspoon baking powder
- oil for frying
- garnish: sour cream, optional 
 
Directions
  • Thaw and drain spinach. Remove any excess moisture.
  • Peel and grate potatoes
    and onions. Remove any excess moisture.
  • Combine all ingredients. In a large, heavy
    skillet heat a small amount of oil. Form ingredients into small 3-inch to 4-inch cakes. Place cakes

into prepared skillet. Brown on both sides.
  • Remove from skillet and place on paper towel
    to remove excess oil.
  •              Place
    in warm oven until time to serve. Garnish with sour cream if desired.
