Grease and flour bread pans. In a large bowl, beat eggs until fluffy. Gradually add sugar until blended. Add oil, apple sauce, vanilla, zucchini, nuts and zest. Beat mixture until well combined. Stir in remaining ingredients. Pour batter into prepared pans. Bake about 50-60 minutes or until done. Remove from pans and cool.	2
