Crab Salad on Greens

Ingredients
- Spring greens mixture
- 8 ounces crab meat, flaked
- 1/4 cup celery, chopped
- 2 tablespoons green onion, sliced thin
- 2 tablespoons red onion, diced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon capers
- salt and pepper
- 1 tablespoon fresh lime juice (adjust to taste)
- 1/4 cup canola oil 
 
Full of flavor and easy to make, this salad provides a light meal for special occasions.

Directions
  • Divide fresh greens between plates.
  • In a medium bowl, combine crab, celery,
    green onion, red onion, parsley, capers, salt and pepper to taste.
  • In a small bowl,
    combine lime juice and oil. Whisk together, drizzle over salads and serve immediately.
