Ingredients - 6 mackerel fillets (approximately 6 oz. each) - 2 tablespoons lemon juice, adjust to taste - 1/4 teaspoon freshly ground black pepper, adjust to taste - 1/4 teaspoon salt, adjust to taste - 1 teaspoon dried oregano - canola oil - 1 fresh lemon, cut into wedges As mackerel cooks the flesh becomes firm and well flavored when prepared fresh from the market. The smaller filets are better tasting than the larger cuts of mackerel. Directions
