Ingredients
- 8 cups old fashioned oatmeal, uncooked
- 1/3 cup vegetable oil
- 1/2 cup honey
- 1/2 teaspoon salt (opt)
- 1 teaspoon vanilla extract
- 1/2 cup coconut, flaked
- 1/2 cup wheat germ
- 1/2 cup flax seed meal (optional)
- 1 cup raisins
- 1 cup dried fruit (craisins, apples, apricots, dates,etc.)
- 1 cup almonds, and/or walnuts, and/or sunflower seeds

- 1/2 cup sesame seeds
- 3/4 cup raw pumpkin seeds (opt) 
 
The options are unlimited in this recipe. Add as much or as little fruits and nuts as you prefer.
Create a healthy dessert parfait with this layered with some low-fat yogurt.
 
Directions
  • Preheat oven to 325° F.
  • Place oatmeal in a large bowl. In a small bowl,
    mix oil, honey, salt, and vanilla. Pour mixture over oatmeal and stir until oatmeal is coated
    with honey mixture.
  • Pour mixture into a lightly greased jelly roll pan or roaster and
    bake 20-30 minutes, stirring every 10 minutes.
  • Cool. Add dried fruits and nuts of your
    choice. Store in an air tight container.
  • Use as a breakfast cereal or topping for ice
    cream and/or yogurt.
