Ingredients
- 4 large eggs
- 1 1/2 tablespoons butter
- salt to taste
- freshly ground black pepper
- 1/4 cup onion, minced
- 1/4 cup sweet red or green bell pepper, diced
- 1/4 cup salsa for garnish 
 
Spice up this breakfast meal with a little color and flavor by adding any type of salsa from mild
to hot.

  • In a medium bowl, beat eggs until completely combined. Add seasoning.

medium heat, melt butter in pan and pour eggs into skillet. Add onion and peppers.
  • Stir
    occasionally with wooden spoon, turning eggs. Cook until they are soft set and somewhat moist,
    approximately 3-4 minutes.
  • Remove from heat. Top eggs with salsa and serve.
