Ingredients
- CHICKEN MIXTURE:
- 3 cups cooked chicken breast, cubed
- 2 cups frozen peas, thawed
- 1 cup celery, chopped
- 1 cup sweet red pepper, chopped
- 1 cup pea pods, cut into 1
- 1/2 cup green onions, chopped
- DRESSING:
- 2 cups mayonnaise
- 4 tablespoons lemon juice
- 2 teaspoons soy sauce
- 1/2 teaspoon ground ginger

- ADD JUST BEFORE SERVING:
- 6 ounces chow mein noodles
- 3/4 cup salted peanuts
- SERVING BED:
- lettuce leaves 
 
A crisp, delicious salad with a crunchy texture and zippy flavor. Perfect for a light lunch.
 
Directions
CHICKEN MIXTURE:
  • Combine the first 6 ingredients in a large salad bowl.
DRESSING:

  • In a medium bowl or container, combine the mayonnaise, lemon juice, soy sauce, and ground
    ginger, stirring until well blended.
  • Add the dressing to the chicken mixture and toss until
    well blended. Cover and chill until ready to serve.
TO SERVE THE SALAD:
  • Fold in
    the chow mein noodles and peanuts just before serving. Reserve some for a garnish (optional).
    Serve on lettuce leaves (optional).
