Herkimer Cheese

A variety of cheese, made from cow's milk, that is named for the county in New York where it originated. This semi-hard cheese is considered to be a sharp cheddar, with a texture and flavor that becomes firm and more intense as it ages. It can be served for snacking, as a table cheese, on sandwiches, as an appetizer with salami and crackers, or as a flavorful addition to be served in salads.
