A thick syrupy sauce created by reducing caramelized sugar and wine or vinegar. A wine vinegar could also be used. It generally includes fruit which provides a fruit flavor. It can be served over any type of meat or seafood and is also used in tomato based sauces to counteract the acidity level.

| "Gastrique" is a fancy name for a simple but delicious reduction of fruit (rhubarb, in this case) and vinegar. It is terrific with any meat, especially game or roast pork. Wine vinegar is best, but use what you have. |
