A German country bread that uses a starter as a leaven. The bread has a chewy, open crumb and a delicious sourdough flavor. Landbrot is prepared with a combination of wheat and rye flour and the dough is usually shaped into a round loaf. The crust is dusted with a generous portion of flour. The name “landbrot” means “land bread” or “bread of the land” and it is very popular throughout Germany, although recipes may differ between various regions of the country.
