Boxty

A traditional Irish dish, the Boxty is made from a combination of cooked and raw grated potatoes that can be made into a cake, pancake or dumpling. The most popular way of preparing Boxty is on a griddle in the form of a pancake that is folded in half after various ingredients have been added as a filling.
