Christmas Lima Bean

With a cream colored background accented in shades of dark burgundy markings, this variety of dried bean is similar in shape to other lima beans but is not related. Christmas lima beans, which may also be referred to as Chestnut lima beans, have a sweeter and nuttier taste than traditional lima beans, somewhat similar to the meat of chestnuts. This bean goes well in rice salads, casseroles, soups, and stuffings.
